The chemical compositions, intermolecular interactions, and functional properties of guar germ proteins (GGP) were investigated at different extraction pH (7 to 11). The protein efficiency ratio, essential amino acid index (46.53), predicted biological value (39.02), nutritional index (42.67), and protein purity (91.69 %) were found to be highest at pH 9. The in-vitro protein digestibility of GGP sample was highest at pH 11. From SDS-PAGE, the band intensity (<10 kDa) became thinner with an increase in extraction pH from 7 to 9 and then thicker. Meanwhile, smallest particle size and weaker ionic and hydrogen bonds were found at pH 11. The ß-sheet content was more dominating in GGP samples. Moreover, higher denaturation temperatures of GGP samples indicated that protein molecules had a compact tertiary structure. Furthermore, the GGP extracted at pH 7 showed better functional properties. The principal component analysis suggested that pH 9 was more suitable for isolating GGP.

Four contrasting varieties of guar, RGC-1002 and RGC-1038, drought tolerant, while, Sarada and RGC-936, drought sensitive, were monitored in watered and drought. The water status, phenolics, plant anatomy and transcript level of genes related to anatomical traits were assessed. The study aimed to decipher the anatomical adaptations of guar plants in response to water stress. The physiological determinants, relative water content (RWC), water potential (ψ), and leaf membrane damage, declined under drought in all four varieties although, the decrement was lesser in the tolerant varieties. Furthermore, the tolerant cultivars subjected to water stress recorded higher accumulation of total phenolic content, anthocyanin and lignin, which efficiently scavenge the reactive oxygen species. The results suggest that the cultivars RGC-1002 and RGC-1038 are better able to resist drought-induced oxidative stress than Sarada and RGC-936. Moreover, leaf, petiole, stem and root anatomical traits viz. size of epidermal cell, parenchyma, width of cortex layer, and diameter of xylem vessels were narrowed in all the varieties although, the decrement was lesser in the tolerant varieties under drought. The expression analysis of genes revealed that drought-tolerant varieties showed enhanced mechanical support for water conduction by up-regulation of genes, Phenylalanine ammonia-lyase1 (PAL1), cinnamate-4-hydroxylase (C4H), 4-coumarate-CoA ligase (4CL), cinnamoyl-CoA reductase (CCR), caffeoyl-CoA O-methyltransferase (CCOMT), and cinnamyl-alcohol dehydrogenase (CAD6) in water stress conditions. The alterations in physio-anatomical, biochemical and gene expression traits in tolerant guar varieties enabled them to maintain steady nutrient transport while reducing the risk of embolisms and increasing water-flow resistance for better survival in water stressed conditions.

Dietary fibers are potent modulators of immune responses that can restrain inflammation in multiple disease contexts. However, dietary fibers encompass a biochemically diverse family of carbohydrates, and it remains unknown how individual fiber sources influence immunity. In a direct comparison of four different high-fiber diets, we demonstrate a potent ability of guar gum to delay disease and neuroinflammation in experimental autoimmune encephalomyelitis, a T cell-mediated mouse model of multiple sclerosis. Guar gum-specific alterations to the microbiota are limited, and disease protection appears to be independent of fiber-induced increases in short-chain fatty acid levels or regulatory CD4+ T cells. Instead, CD4+ T cells of guar gum-supplemented mice are less encephalitogenic due to reduced activation, proliferation, Th1 differentiation, and altered migratory potential. These findings reveal specificity in the host response to fiber sources and define a pathway of fiber-induced immunomodulation that protects against pathologic neuroinflammation.

To understand drought tolerance mechanism(s) in clusterbean (Cyamopsis tetragonoloba), we conducted physiological, biochemical, and de novo comparative transcriptome analysis of drought-tolerant (RGC-1002) and drought-sensitive (RGC-1066) genotypes subjected to 30 days of drought stress. Relative water content (RWC) was maintained in tolerant genotype but was reduced in sensitive genotype. Leaf pigment concentrations were higher in tolerant genotype. Net photosynthesis was significantly decreased in sensitive genotype but insignificant reduction was found in tolerant genotype. Enzymatic antioxidant (GR, APX, DHAR) activities were enhanced in tolerant genotype, while there were insignificant changes in these enzymes in sensitive genotype. The ratios of antioxidant molecules (ASC/DHA and GSH/GSSG) were higher in tolerant genotype as compared to sensitive genotype. In sensitive genotype, 6625 differentially expressed genes (DEGs) were upregulated and 5365 genes were downregulated. In tolerant genotype, 5206 genes were upregulated and 2793 genes were downregulated. In tolerant genotype, transketolase family protein, phosphoenolpyruvate carboxylase 3, temperature-induced lipocalin, and cytochrome oxidase were highly upregulated. Moreover, according to Kyoto Encyclopedia of Genes and Genomes (KEGG) analysis, the drought tolerance may be attributed to upregulated starch and sucrose metabolism-related genes in tolerant genotype. Finally, quantitative real-time PCR confirmed the reproducibility of the RNA-seq data.

Cluster bean (Guar) is the major source of industrial gum. Knowledge on the molecular events regulating galactomannan gum accumulation in guar will pave way for accelerated development of gummy guar genotypes. RNA Seq analysis in the immature seeds of contrasting cluster bean genotypes HGS 563 (gum type) and Pusa Navbahar (vegetable type) resulted in the generation of 19,855,490 and 21,488,472 quality reads. Data analysis identified 4938 differentially expressed genes between the gummy vs vegetable genotypes. A set of 2241 genes were up-regulated and 2587 genes were down-regulated in gummy guar. Significant up-regulation of genes involved in the biosynthesis of galactomannan and cell wall storage polysaccharides was observed in the gummy HGS 563. Genes involved in carotenoids, flavonoids, non mevalonic acid, terpenoids, and wax metabolism were also up-regulated in HGS 563. Mannose and galactose were the major nucleotide sugars in Pusa Navbahar and HGS 563 immature seeds. Immature seeds of HGS 563 showed high concentration of mannose and galactose accumulation compared to Pusa Navbahar. qRT-PCR analysis of selected genes confirmed the findings of transcriptome data.

BACKGROUND: Guar (Cyamopsis tetragonoloba (L.) Taub.), a short-day plant, is an economically valuable legume crop. Seeds of guar serve as a source of galactomannan polysaccharide, known as guar gum, which is in demand in the gas and oil industries. The rapid and complete maturation of guar seeds depends on the flowering time of a particular genotype. It is known that flowering in guar is controlled by several gene systems. However, no information about the process and mechanisms that trigger flowering in guar on the molecular and biochemical levels was previously reported. The aim of the study was to investigate the metabolic landscape underlying transition to the flowering in guar using GC-MS-metabolomic analysis. RESULTS: 82 diverse guar genotypes (each in 8 replicates) from the VIR collection were grown under experimental conditions of high humidity and long photoperiod. In the stress environment some guar genotypes turned to flowering early (41 ± 1,8 days from the first true leaf appearance) while for others the serious delay of flowering (up to 95 ± 1,7 days) was observed. A total of 244 metabolites were detected by GC-MS analysis on the third true leaves stage of 82 guar genotypes. Among them some molecules were associated with the transition of the guar plants to flowering. Clear discrimination was observed in metabolomic profiles of two groups of «early flowering¼ and «delayed flowering¼ plants, with 65 metabolites having a significantly higher abundance in early flowering genotypes. Among them 7 key molecules were identified by S-plot, as potential biomarkers discriminating of «early flowering¼ and «delayed flowering¼ guar genotypes. CONCLUSIONS: The metabolomic landscape accompanying transition to flowering in guar was firstly described. The results obtained can be used in subsequent genomic research for identifying metabolite-gene associations and revealing genes responsible for the onset of flowering and photoperiod sensitivity of guar. In addition, the detected key metabolites associated with flowering of guar can be employed as biomarkers allowing rapid screening of breeding material for the potentially early flowering genotypes.

Guar gum is an important raw material in the food, textile and oil industries, but the biosynthesis of guar gum remains unclear. To illuminate the genes involved in guar gum biosynthesis, guar beans from 30 and 40 days after flowering (DAF) were used for RNA sequencing in this study. A total of 2,535 and 2,724 preferentially expressed genes were found in 30 and 40 DAF endosperm, and 3,720 and 2,530 preferentially expressed genes were found in 30 and 40 DAF embryos, respectively. Of these, mannan synthase genes, α-galactosyltransferase genes and cellulose synthase genes were preferentially expressed in the endosperm from 30 and 40 DAF. The high expression level of these glycometabolism genes in endosperm is consistent with the expectation that the main component of guar gum is galactomannan. We believe that genes related to guar gum biosynthesis found in this study will be useful for both new variety development via genetic engineering and synthetic biology research on guar gum biosynthesis in the future.

BACKGROUND: The present study evaluated the potential of increasing dietary levels of the most limiting amino acids such as total sulfur amino acids (TSAA) with respect to mitigating the adverse effects of the inclusion of guar meal (GM) in the diet of WL layers on egg production, feed efficiency and egg weight. In total, 4928 WL (Lohmann L) hens (32 week of age) were randomly allotted to eight treatments with seven replicates of 88 birds. The dietary treatments were a set of four maize-soybean meal based diets containing four graded concentrations of TSAA (5.85, 6.18, 6.51 and 6.84 g kg-1 ) and another set of four diets containing 100 g kg-1 guar meal (GM) with similar concentrations of TSAA. RESULTS: The inclusion of 100 g kg-1 GM in the diet caused a 20%, 23%, 35.5% and 6.7% reduction in egg production, daily egg mass, feed efficiency and egg weight, respectively, when the diet contained 5.85 g kg-1 TSAA. Increasing TSAA levels in GM groups reduced the adverse effects on egg production and feed efficiency 50%, with no effect on egg weight. The TSAA requirement of WL birds fed 10% GM was estimated as 6.28-7.39 g kg-1 diet at different ages. CONCLUSION: Increasing dietary TSAA to 7.39, 6.28, 6.53 and 6.37 g kg-1 or dTSAA (digestible TSAA) to 6.53, 5.32, 5.80 and 5.63 g kg-1 during 33-36, 37-40, 41-44 and 45-48 weeks of age, respectively, may be an effective and practical strategy for reducing the adverse effects of inclusion of 100 g kg-1 GM in the diet of WL layers. © 2018 Society of Chemical Industry.

Metallothioneins (MTs) are involved in cellular homeostasis of essential metal ions and detoxification of nonessential metal ions. We report here the identification of four MT genes, CtMT1, CtMT2, CtMT3 and CtMT4, encoding CtMT1, CtMT2, CtMT3 and CtMT4 proteins, respectively, from the industrial guar crop. The primary structures of last three proteins were similar to those of respective MT proteins of other plants but the CtMT1 protein primary structure was different from the other plant MT1 proteins in having an additional C-X-C motif. The four MT genes showed tissue specific expression patterns suggesting their specific roles in different tissues. High expression of CtMT1 gene was observed in roots and nodules whereas CtMT2 and CtMT3 genes showed high expression in leaves. The expression of CtMT4 gene was high in seeds. The qRT-PCR studies revealed upregulation in expression of CtMT1 gene under drought stress. Recombinant CtMT1 protein was produced in E. coli Rosetta cells and purified by metal affinity chromatography. The purified protein showed antioxidant property and the order of its metal ion binding affinities was Cu2+ > Zn2+ > Fe2+ > Cd2+. This information about CtMT1 protein is expected to be useful in understanding its role in drought tolerance and other physiological processes of guar.

Owing to the presence of 80% soluble dietary fibre, high protein content and high value gum, clusterbean (Cyamopsis tetragonoloba) has recently emerged as an economically important legume. The developing clusterbean seeds accumulate 90% galactomannans in the endosperm and, therefore, can be used as a model crop to understand galactomannan biosynthesis and its regulation. miRNAs are tiny master regulators of their corresponding target genes, resulting in variations in the amounts of their metabolic end products. To understand the role of these regulators in galactomannan biosynthesis regulation, small RNA libraries were prepared and sequenced from five tissues of clusterbean genotype RGC-936, and miRanalyzer and DSAP programs were used to identify conserved miRNAs and novel small RNAs. A total of 187 known and 171 novel miRNAs were found to be differentially expressed, of which 10 miRNAs were validated. A complicated network topology and 35% sharing of the target mRNAs between known and novel miRNAs suggest random evolution of novel miRNAs. The gene ontology (GO) annotation of potential target genes revealed the genes coding for signalling and carbohydrate metabolism (50.10%), kinases and other enzymes (20.75%), transcription factors (10.20%), transporters (8.35%) and other targets (10.6%). Two novel unigenes were annotated as ManS (mannosyltransferase/mannan synthase) and UGE (UDP- D-glucose 4-epimerase) and validated as targets for three novel miRNAs, that is Ct-miR3130, Ct-miR3135 and Ct-miR3157. Our findings reveal that these novel miRNAs could play an important role in the regulation of the galactomannan pathway in C. tetragonoloba and possibly other galactomannan-producing species.

Plant polysaccharides are used in a growing number of applications, in their native or in chemically and/or biochemically modified forms. In the present work, we compare TEMPO-mediated oxidation with laccase of polygalactomannans (PGM) from different species of plant leguminous to chemical oxidation with NaClO/NaBr/TEMPO. We have investigated the gums from: locust bean (Ceratonia siliqua), tara (Caesalpinia spinosa), guar (Cyamopsis tetragonolobus), sesbania (Sesbania bispinosa) and fenugreek (Trigonella foenum-graecum). Upon laccase/TEMPO oxidation, PGM viscosity and concentration of reducing groups increased up to five-fold and structured, elastic, stable gels were formed, which could be degraded by hydrolysis with ß-mannanase. Conversely, chemical oxidation with NaClO/NaBr/TEMPO caused a rapid, intermediate transition of the gum solutions to compact gels, that immediately reverted to liquid, with a lower viscosity than at the start and an increased concentration of reducing groups, similar to the reaction with laccase. We interpret the above as due to, in the case of laccase, oxidation of primary hydroxyl groups to aldehydes, able to form stable hemiacetalic bonds with free hydroxyl groups. While upon chemical oxidation, primary OH's are only transiently oxidized to aldehydes, followed by rapid oxidation of all carbonyl groups to carboxylates. In either cases, TEMPO appeared to cause a limited splitting of glycosidic bonds of PGM. Native and oxidized PGM were further characterized by 1D and 2D NMR spectroscopy and by rheology.

In perhaps the first-ever study of its kind, the effect of vermicompost, derived solely from an allelopathic weed, on the germination, growth, and yield of a botanical species, has been carried out. In test plots, the soil was treated with the vermicompost of lantana (Lantana camara) at the rates of 5, 7.5, and 10 t ha(-1), and cluster bean (Cyamopsis tetragonoloba) was grown on it. The performance of these systems was compared with the systems in which the soil was fortified with inorganic fertilizers (IFs) in concentrations equivalent to those present in the respective vermicompost (VC) treatments. Additionally, a set of control was studied in which the soil was used without fortification by either VC or IF. It was seen that up to 51.5 % greater germination success occurred in the VC treatments compared to controls. VC also supported better plant growth in terms of stem diameter, shoot length, shoot mass, number of leaves, and leaf pigments. The positive impact extended up to fruit yield. In addition, vermicast application enhanced root nodule formation, reduced disease incidence, and allowed for a smaller number of stunted plants. The results indicate that allelopathic ingredients of lantana seem to have been totally eliminated during the course of its vermicomposting and that lantana vermicompost has the potential to support germination, growth, and fruit yield better than equivalent quantities of IFs.

The antioxidant role of tender cluster beans (Cyamopsis tetragonoloba, CB), a rich source of soluble fibre, was investigated in a hypercholesterolemia-induced oxidative stress situation in rats. In the context of dietary garlic (Allium sativa) potentiating the hypocholesterolemic influence of CB, we also examined if dietary garlic enhances the antioxidant potential of CB. Groups of Wistar rats were rendered hypercholesterolemic by feeding them a 0.5% cholesterol diet for 8 weeks. Dietary interventions were made by inclusion of 15% tender CB powder or 1% garlic powder or their combination in a high-cholesterol diet. Concentrations of antioxidant molecules and activities of antioxidant enzymes in blood and liver were examined. Dietary CB displayed an antioxidant influence in terms of elevating ascorbic acid and glutathione concentrations and stimulating the activities of antioxidant enzymes both in blood and liver. The antioxidant effect of dietary CB was generally potentiated by co-administration of garlic. Thus, consumption of tender CB and garlic together could form a strategy for improving the body's antioxidant status.

The effect of feeding different proportions of groundnut haulms (Arachis hypogaea) and cluster bean straw (Cyamopsis tetragonoloba) on nutrient digestibility, nutritive value, nutrient intake and serum biochemical parameters was studied using nine male dromedary camels of Bikaneri breeds (637.5 kg average body weight; 8-9 years of age). Groundnut haulms (GNH) and cluster bean straw (CBS) were fed in one of three ratios, 75:25, 50:50 and 25:75 in treatments T(1), T(2) and T(3), respectively. In all treatments, concentrate mixture was fed as per requirement of the camels. The groundnut haulms were more nutritive as compared to the cluster bean straw. The nutrient digestibility of dry matter, organic matter, crude protein (CP), crude fibre and acid detergent fibre was better in T(1) than T(2) and T(3). Likewise, the CP, digestible crude protein and total digestible nutrient contents were significantly higher in T(1) followed by T(2) and T(3). There was non-significant affect on average daily gain of camels. However, dry matter intake, digestible crude protein intake and total digestible nutrients were better in T(1) as compared to T(2) and T(3). The total water intake per kilogram of dry matter intake (litres) was 2.98, 2.89 and 2.68, respectively, in T(1), T(2) and T(3). The camels in all the treatments were in positive nitrogen, calcium and phosphorus balance. The treatments had a significant effect on serum biochemical parameters like glucose, cholesterol, aspartate transaminase and creatinine. The results may conclude that feeding of higher proportion of groundnut haulms as compared to cluster bean straw has pronounced improvement in nutritional utilisation by the camels.

The effects of ultraviolet-B (UV-B: 280-320 nm) radiation on the photosynthetic pigments, primary photochemical reactions of thylakoids and the rate of carbon assimilation (P(n)) in the cotyledons of clusterbean (Cyamopsis tetragonoloba) seedlings have been examined. The radiation induces an imbalance between the energy absorbed through the photophysical process of photosystem (PS) II and the energy consumed for carbon assimilation. Decline in the primary photochemistry of PS II induced by UV-B in the background of relatively stable P(n), has been implicated in the creation of the energy imbalance(.) The radiation induced damage of PS II hinders the flow of electron from Q(A) to Q(B) resulting in a loss in the redox homeostasis between the Q(A) to Q(B) leading to an accumulation of Q(A)(-). The accumulation of Q(A)(-) generates an excitation pressure that diminishes the PS II-mediated O(2) evolution, maximal photochemical potential (F(v)/F(m)) and PS II quantum yield (Φ(PS II)). While UV-B radiation inactivates the carotenoid-mediated protective mechanisms, the accumulation of flavonoids seems to have a small role in protecting the photosynthetic apparatus from UV-B onslaught. The failure of protective mechanisms makes PS II further vulnerable to the radiation and facilitates the accumulation of malondialdehyde (MDA) indicating the involvement of reactive oxygen species (ROS) metabolism in UV-B-induced damage of photosynthetic apparatus of clusterbean cotyledons.

BACKGROUND: Guar, Cyamopsis tetragonoloba (L.) Taub, is a member of the Leguminosae (Fabaceae) family and is economically the most important of the four species in the genus. The endosperm of guar seed is a rich source of mucilage or gum, which forms a viscous gel in cold water, and is used as an emulsifier, thickener and stabilizer in a wide range of foods and industrial applications. Guar gum is a galactomannan, consisting of a linear (1-->4)-beta-linked D-mannan backbone with single-unit, (1-->6)-linked, alpha-D-galactopyranosyl side chains. To better understand regulation of guar seed development and galactomannan metabolism we created cDNA libraries and a resulting EST dataset from different developmental stages of guar seeds. RESULTS: A database of 16,476 guar seed ESTs was constructed, with 8,163 and 8,313 ESTs derived from cDNA libraries I and II, respectively. Library I was constructed from seeds at an early developmental stage (15-25 days after flowering, DAF), and library II from seeds at 30-40 DAF. Quite different sets of genes were represented in these two libraries. Approximately 27% of the clones were not similar to known sequences, suggesting that these ESTs represent novel genes or may represent non-coding RNA. The high flux of energy into carbohydrate and storage protein synthesis in guar seeds was reflected by a high representation of genes annotated as involved in signal transduction, carbohydrate metabolism, chaperone and proteolytic processes, and translation and ribosome structure. Guar unigenes involved in galactomannan metabolism were identified. Among the seed storage proteins, the most abundant contig represented a conglutin accounting for 3.7% of the total ESTs from both libraries. CONCLUSION: The present EST collection and its annotation provide a resource for understanding guar seed biology and galactomannan metabolism.

A 5x5 Latin square experiment was conducted to evaluate the effect of feeding low concentrations of guar germ or a combination of guar germ and hull (guar meal) in high-production laying hen diets. A total of 125 Lohmann laying hens (21 wk old) of similar BW were randomly assigned to 5 blocks. Each block was divided into 5 experimental units, consisting of 5 hens per unit. Hens were fed either a nonguar control diet, or 1 of 4 diets containing either 2.5 or 5% guar germ, or 2.5 or 5% guar meal over a 20-wk trial period (five 4-wk periods). No significant differences were observed when feeding either 2.5 or 5% guar germ or meal (P>0.05) on hen-day egg production or feed consumption. Significant differences in egg weight, total egg mass per hen, and feed conversion ratio were detected in hens fed 2.5% guar meal, whereas they remained unchanged for diets containing either level of guar germ or 5% guar meal. Feeding either level of guar germ or guar meal did not affect shell quality (shell thickness, egg breaking force, and specific gravity), Haugh units, or egg yolk color (L*, a*, b*). The results showed that both guar germ and guar meal can be fed to high-production laying hens at up to 5% without adverse effects on laying hen performance.

Ingestion of guar gum decreases postprandial glycemia and insulinemia and improves sensitivity to insulin in diabetic patients and several animal models of diabetes. The aim of the present study was to compare the short-term and long-term effects of guar on plasma insulin and glucagon-like peptide 1 concentration in healthy rats. In the short-term experiments, the concomitant intragastric administration of glucose and guar reduced the early increment in plasma glucose, insulin and glucagon-like peptide 1 concentration otherwise induced by glucose alone. Comparable findings were made after twelve days of meal training exposing the rats to either a control or guar-enriched diet for fifteen minutes. Mean plasma glucose concentrations were lower while mean insulin concentrations were higher in the guar group than in the controls according to intragastric glucose tolerance tests conducted in overnight fasted rats maintained for 19 to 36 days on either the control or guar-enriched diet. The intestinal content of glucagon-like peptide 1 at the end of the experiments was also lower in the guar group. Changes in body weight over 62 days of observation were comparable in the control and guar rats. Thus, long-term intake of guar improves glucose tolerance and insulin response to glucose absorption, without improving insulin sensitivity, in healthy rats.

La diarrea infecciosa sigue siendo un problema de salud importante en la edad infantil en todo el mundo con una morbilidad y mortalidad asociada secundaria a la deshidratación que produce. La evidencia de un transporte de sodio acoplado al transporte activo de glucosa en el intestino ha constituido el fundamento de la rehidratación oral. Esta es segura y efectiva en el tratamiento de la deshidratación, pero no disminuye las perdidas fecales ni la duración de la diarrea. Por ello se investigan nuevas soluciones de rehidratación oral que disminuyan la diarrea. Se ha buscado el aumento de la absorción de fluidos por el intestino delgado mediante la disminución de la osmolaridad de la solucion, la sustitución de la glucosa por otros transportadores como arroz o aminoácidos, y la adición de carbohidratos complejos no digeribles o probióticos


Infectious diarrhea in childhood continues to be a major health problem worldwide. The morbidity and mortality associated to this result from dehydration. The discovery that sodium and glucose transport is coupled in the small intestine was the scientific basis of oral rehydration development. Oral rehydration is safe and effective in the treatment of dehydration attributable to diarrhea, but it does not reduce the fecal fluid loss and the duration of diarrhea. There have been attempts to improve the oral rehydration solution in order to reduce the amount of diarrhea. Most of these efforts have focused on the enhancement of small-bowell absorption of fluids by using hypo-osmolar solutions, the inclusion of aminoacids or rice as substrates to stimulate sodium absorption and the addition of non-digestible carbohydrates or probiotics

La goma guar es un mucílago neutro que se obtiene por molturación del endospermo de las semillas de la planta Cyamopsis tetragonolobus (L.) Taub., que pertenece a la familia de las leguminosas. La goma guar es un polisacárido de galactomanana cuyo peso molecular oscila entre 220.000 ± 10% Daltons. Por cada unidad de galactosa hay entre 1.8 y 2 manosas. Se utiliza en numerosas aplicaciones tanto en la industria alimentaria como en otras industrias, como la textil, farmacéutica, del papel, refinado de aceites, explosivos e industria química. Su uso en alimentación es cada vez más frecuente, tiene un papel muy importante en las fases de presentación y de procesado de los alimentos. Se utiliza en sopas, postres, aliñados de ensaladas, comida congelada, bebidas, quesos suaves, yogures, mezclas instantáneas, productos de bollería, conservas y comida de niños, donde actúa como agente emulsificador, y estabilizador de las suspensiones, espesante y para mejorar la palatabilidad. Además tiene importantes aplicaciones terapéuticas en el tratamiento de la diabetes, obesidad, hipercolesterolemia, gastritis, úlceras gastroduodenales y estreñimiento


Guar gum is a neutral mucilage obtained of the ground endosperm of seeds of Cyamopsis tetragonolobus (L.) Taub. (Leguminosae). Guar gum is a galactomannane polysaccharide with a molecular weight between 220.000 ± 10% Daltons. There are between 1.8 - 2 mannose residues for every galactose residue. It is used in numerous food and non-food applications, such as textile, pharmaceutical, paper, oil well drilling, explosive and chemical industry. This gum has become increasingly common in food, as it plays an important role in processing stages and final presentation of the product. It is used in soups, desserts, salad dressings, deep frozen food, beverages, soft cheese, yoghurt, instant mixes, bakery products, confectionery, canned foods and baby foods, where it acts as emulsifier, stabiliser suspending agent, thickener and mouth feel improver. In addition it has important therapeutic applications in the treatment of DMNID, obesity, hypercholesterolemia, gastritis, gastroduodenal ulcer and constipation
